Dolphin's Caribbean Restaurant
Dolphin’s Caribbean Restaurant is ran by Randolph, who was born in the tropical island of Barbados and from an early age was always fascinated by the fish truck coming through his village – “fish, fish, five for a dollar”!
One day he and a group of ten year old friends decided to buy some of the fish and took some sweet potatoes and breadfruit from their garden and set up an outside fire and the story began.
He learnt much from his grandmother, watching her cook in her kitchen and picking up the traditional Bajan recipes.
Early on he started catering street fare to local events such as football and volleyball games.
In the 1990s he brought his culinary skills to the UK, cooking first of all in Wales and then in Reading.
He was being constantly being asked by the West Indian community in Reading to make home cooked meals for them and Dolphins was born.
